Well, I know it's too late to be thrilled this Thursday, but Friday is just as good (for me at least)! What to be thrilled about this Friday? Strawberry cheesecake- love! Strawberry cheesecake inside out- LOVE even more! So you would probably figure that when my eye caught this recipe (on BakeOven) for cheesecake stuffed strawberries, I was SO excited, enough to make me do a little happy dance.
So here's what I did:
I first hulled a pack of strawberries, using this making-life-easier tool I use to hull veggies, especially some squash and zucchini. A friend got it for me from overseas, and it has made removing the seeds/insides of any food easy peasy!
Next, I made the cheese cake stuffing, this was the recipe for the filling I found:
1 8-ounce cream cheese
2 tbsp powdered sugar
3/4 tsp vanilla extract
After I mixed those, I realized there was something missing, so I added about 3 tbsp of whipped cream (cool whip is my fave), or to taste, and it made a much better difference!! It was so scrumptious that I had a few cheater spoonfuls before I spooned them in.oops.
The recipe called for covering the open end of the strawberries with graham cracker crumbs- perfect to make the cheesecake complete. But, I was totally craving chocolate covered strawberries at the time, so I decided to twist it up a bit! I melted a bowl of milk chocolate chips, and dipped the tops of the delicious looking strawberries and placed them on a foil in the fridge to let them harden.
The result: chocolate covered strawberries taken to the next level! They sure were YUMMY!
These babies would be just perfect for some finger sweets for guests, or a quick and easy, unique desert!
Will definitely be making these tasties again, sometime pretty SOON!
So it's not bad enough that I'm quite the Nutella addict, then Biscoff (the ultimate airplane cookie) had to make their own spread. I saw it at the grocery store the other day- and my hand just drew to it. I couldn't wait to taste it the second I got home. I didn't know what to expect from a creamy spread based off of a cinnamonny cookie I always loved. It was GOOD- and not the good like, okay this is pretty good- no, the good as in we finished the entire jar in a few days! That's not good because the calories in that stuff are not ignorable- 90 in a single tablespoon! Even that couldn't stop me from reaching for the red capped jar in the pantry (which I tried to hide from myself a few times- didn't work).
Something else that made my day was a little tweak I got for my car- little enough to make me pretty excited. I was at Target (the best store ever), in the dollar section, and I got this tooo adorb mini tissue box for my ride, too cute that I had to share. I would probably rarely ever use these, but seeing a cute baroque cube in my arm rest will definitely make me smile everytime I open it!
Last but not least, these socks from Banana Republic for hubby were too sweet to overlook! It's like wearing your heart on your sleeve, sort of, except on your sock... close enough for me!

What do you get when you combine two of my favorite things- Coke and high fashion?? A trendy stylish bottle of amazingness that looks even more delicious than usual! (if you couldn't tell by now, I'm addicted to diet coke, yup!) As a generous charity project, Coca-Cola has tied in the cream of the crop designers to create upscale coke bottles. Designers Rosella Jardini (Moschino), Donatella Versace, Angela Missoni, Alberto Ferreti, Consuelo Castiglioni, Anna Molinari (Blumarine (yay! one of my ULTIMATE favorite designers)), and Etro have put together bottle designs representing the uniqueness of each designer- and what a success! You can tell who designed which bottle without even looking at the designers name incorporated into these fabulous designs!
Amazing, right? The Etro embodies all the peaslies they weave in to all the modern blazers they always feature in their collections. The Blumarine- simple, girly, and perfect!- it looks exactly like a Blumarine top I have, but wrapped around a coke bottle. Alberta Ferreti's bottle is simple and chic like all of her creations. And Moschino... the wild and flashy brand- LOVE the way they made their bottles stand out, just like they design their clothes!
I have a feeling these fab-cokes would quench my thirst more than they normally would! I wonder why....

So I saw this recipe that looked quite delectable and unique on TastyKitchen and I was too excited to find that I had all the ingredients already (BEST FEELING)! Perfect! So I followed their recipe:
1 can(12 Ounces) Pillsbury® Golden Layers® Refrigerated Buttermilk Biscuits
¼ cupsCanola Oil
3 TablespoonsGrated Parmesan Cheese
½ teaspoonsGarlic Powder
1 teaspoonDried Oregano
1 teaspoonDried Parsley
Except I changed the garlic powder to fresh minced garlic, and the Canola Oil into Olive Oil (my best friend when it comes to cooking).
I followed these Directions:
Roll each biscuit into a 12-inch rope and tie into a knot; tuck ends under. Place 2 inches apart on a greased baking sheet. Bake at 400° for 8-10 minutes or until golden brown.
In a large bowl, combine the remaining ingredients; brush the warm knots with the mixture. Yield: 10 knots.
I did exactly that. But after the fourth one, an idea sprung in my head and a grabbed the shredded mozzarella cheese from the fridge and sort of stuffed the 5th roll with some. I also sprinkled some on top of 2 of the biscuits to see how they would turn out.
I was anxious just waiting by the oven with my mouth watering... I was too pleased to find the biscuits looked great!! The knot is a great garnishing idea!! However, their taste was... meh. :( The best thing about the recipe is the presentation. That was a bummer, BUT, after I ate one, I immediately had ideas of making the recipe one to actually indulge in!
So, this was what was wrong with them- they were too blah. The touch of sweetness of the Buttermilk flavor from the biscuits didn't exactly mesh well with the savory cheesy garlic oil mix. Also, merely brushing the biscuits did not add enough flavor- actually, it was just an itty bitty lick of flavor that was added to each biscuit- and that was NOT enough! Plus adding the mozzarella on top of biscuits- not the best idea because it hid the design of the whole thing. (Oh, I also used Grand Biscuits instead of normal ones, they turned out a bit bigger than I wanted)
As a result, I'm going to try this readjusted recipe the next time:
. 1 can Pillsbury®Thin Pizza Crust, or 1 sheet of Peppridge Farm Puff Pastry Sheets
. 1/4 cup Olive Oil
. 2 Tbs Grated Parmasean Cheese
. 1/2 Tsp minced garlic paste
. 1 Tsp dried oregano, or Thyme (I think would be equally tasty)
. 1 Tsp dried parsley leaves
. Dash of salt
(if more is needed, just make add more olive oil and parmasean cheese)
Okay as directions go, I would say to roll out about an inch wide strip of dough into about a foot long, and before tying it into a knot, brush/soak the entire rope- that way tying it would be easier, and the entire roll would be soaked with flavor.
Second, I would definitely add shredded mozzarella to the middle of them, it doesn't add much flavor, but enough to make it gooey and moist! Then tie them and do exactly the previous routine of tucking the ends under then placing them in the oven.
I hope this would be better! I'll try them again and post if it was a successful change or not!

I haven't been posting much lately, I was too preoccupied with an enrapturing book, some not so pleasant studying, and of course, most importantly, my mommy's long long LONG awaited visit! I don't see my mom too often, and when I do, it's definitely the best! She's my best friend- and when she comes, I feel like someone clicked the refresh button on me.
I miss cooking together (especially beef wraps!), organizing together, taking advice from her, and best of all, shopping together (best shopping partner ever!)!

Because I said I loved this outfit back here, my mom thought it would be a great surprise to get it for me! TOO sweet! They were GORG in person, and fit in a flattering way, but sadly, I was more in the mood for skinnies than bootcuts, so those went back to FL (since we don't have a TB store here)... did I make a mistake??
I would have chosen these Pilero and the Letterpress shoes merely for the super adorable vintage shoebox they came in! And red shoes (plus striped insides) with dangly Eiffel Towers definitely have my name written all over them!

The funnest part was taking her to a modern dance concert that I had to attend for my ballet course! It was the first time we watched modern artists, and to our surprise, it was pretty fun and interesting trying to make out what message the creative dancers were trying to express! I also took my youngest brother, who didn't enjoy it much, to the extent of letting out a few loud yawns... not too advantageous in my 'making a good impression' department, since my dance professor was sitting right behind us! All in all, it was a fun experience! (except now I have to dreadfully write an essay about it)...boo.
Can you believe it, Oreos have been out and about for 100 years now!!! Thank you Oreos for everything you have done to my tastebuds for the past 20 years, especially now with the new limited edition BIRTHDAY CAKE OREOS! They are the best flavor O's I've tried...right after the Berry Sherbert ones.
Anyhoo, I saw a mouthwatering recipe for Birthday Cake Oreo stuffed BROWNIES(!!!) at Bake at 350 (an amazing recipe blog), and I just had had HAD to try them- so I did, and O.M.G they were yumm-mazing!
I followed the exact recipe- but in the end, after I took the brownies out from the oven, I covered them in aluminum foil right away. I do this everytime I make brownies to get them to stay mushy and gooey!
The last day of spring break is always bittersweet. Bitter because it's over, and sweet because of all the fond memories made in it.
When I think spring break, I think tan, warm, and fun!

What's any warmth without a beach? One of my favorite things is getting some R&R on the shore, listening to the roaring waves, with the wind breezing in my face, while sipping an ice cold drink. I miss that salt water scent that soaked up almost everything I took with me. I loved the sand on this particular beach- it was more like tiny pebbles.

Now that I'm back: Shocked to find sand in my hair being beach free for 3 days! And that big smile that was brought to my face when I reminisced (sort of) after discovering about a handful of sand in the emptied suitcases.
One of the many things I've been addicted to is tanning. But, due to health precautions- I've forced myself to quit the booth- *tear*. So I took advantage of the week off and got the most sun I can possibly absorb, for I function best when I'm in the deepest shade of caramel :)

After I took them off, I was EXTATIC to see that I turned 8 (maybe even 10!) shades darker!
Now that I'm back: I realized/remembered that suntanning has a complement- peeling... UGH!
To me, having fun can be anything from riding rollercoasters, to eating McNuggets, to painting my nails. So I had boat loads of fun indulging in delicious French bakeries filled with everything vintage. My.Favorite.
I would buy this charming chandelier in a heartbeat if I ever found it retail. So rustic!
An old cash register is always fun to play with... or in my case, look at.
