Happy (late) Valentine's Day!! As cliché , overdone, and cheesy this love day may be, I have to admit- I'm a huge sucker for Valentine's Day! For Vday, I always like to make a special dinner, that I don't make very often- yesterday I made mussels!!! Mussels are one of my favorite sea foods- so I made a mussel pasta, and it turned out oh so yummy! The first thing I did was boil the mussels for about 7 minutes. Then, I boiled a handful of thin spaghetti- in the mean time, I heated 1/2 cup of olive oil in a pot. I then put one petitely diced onion into the oil, and waited for it to turn golden. Soon after, I added 2 tablespoons of fresh minced garlic. Then, I added 3 diced tomatoes, 2 tablespoons of tomato paste, and about 1/2 cup of chopped cilantro (parsley would taste amazing with it too). Tonight I tried a different take on lasagna. Actually, it was more like lasagna meets spaghetti- and I'm proud to say it was definitely a success! Making it was interesting too- I first pan fried 1 pound of ground beef with half of a diced onion. At the same time, I boiled half a package of thin spaghetti. I then needed to make some marinara sauce to add on top of the ground beef- I used a whole can of tomato paste, about 1.5 cups of water, salt, onion powder, fresh garlic paste, fresh basil (that I froze when I had the actual plant in the summer), and some oregano. It was SO TASTY! I then added cooked peas and carrots to the beef mix (about 1 cup). Just one thing was left to make- b é chamel sauce. I mixed some flour and olive oil in the bottom of a pot over medium-low heat until they were an equally blended consistancy.
